Ingredients:

1 Dz. Medium Eggs
1-3 lb (tube) of Breakfast Suasage (depends on the egg sizes and you can never have too much!)
a whole mess of breadcrumbs (I use those cans of pre-done breadcrumbs all seasoned and ready to go!)
deep fryer or frying pan with a ready supply of your favorite cooking oil handy.

Boil the eggs and peel them. After they have cooled (so you can handle them better) cut open the tube of breakfast sausage and get ready to get messy. You are going to encase the boiled eggs in a rather thin coating of the sausage. The first couple will be challenging but you'll be a pro by the end of the dozen. Next you'll roll the sausage encased eggs in the breadcrumbs. Don't be afraid to really powder these things up and the breakfast sausage is nice and sticky so it welcomes the breadcrumbs easily.

Finally, it's time to fry em. If using a deep fryer, set the oil to about 350 and CAREFULLY deposit the eggs into the hot oil. They'll cook for a couple of minutes. The breadcrumbs will turn a nice golden brown and you'll know it's time to pull them out. If you are using a pan to fry them, you can still do it, but you'll spend your time rolling them around a lot to get the sausage cooked on all sides. Folks this is a fun dish to make and always a big hit at pot-luck fellowships! Drain them on brown paper bags, or in a metal collander, or on a heaping pile o' paper towels. Enjoy!!

yes these are such a treat. They can be tricky to make at first but once you get the hang of it, you'll be the hit at any gathering. It's hard to believe something so simple can be so delicious, but as pointed out with your Shepherd's pie recipe, simple is sometimes best! (also a big fan of shepherd's pie!)
